Wheat-Free Fruit Crisp

Place 2-3 cups of rolled oats into the blender. Blend on high until you have a mixture of oats and oat flour. Combine with 1 cup of raw sugar, a pinch of salt and 1 Tbsp of cinnamon.
When mom isn't looking, pop a handful of this dry mixture in your mouth.
Melt 1/2 cup of butter (more or less) and pour over the dry mixture. Blend butter and dry ingredients until you have nice crumbles. Butter a baking dish and layer cooked fruit in the bottom of the pan about an inch deep. We've cooked apples, pears and rhubard with honey and cinnamon in the microwave(separately). We've also just used applesauce. Canned fruit might be good, too.
Layer the crumbles on top and bake at 350 for 30-45 minutes. The top should be browned lightly. The house will smell wonderful when it's ready.
Top with plain or vanilla yogurt, whipped cream or ice cream. Try not to eat the whole pan after the baby is in bed and the rest of the family is off playing baseball.

I'm gluten free so this recipe will come in handy! I actually have oat flour in the fridge...so now I have a way to use it:)

Audrey loves to taste EVERYTHING. Yesterday she grabbed a pinch of flour and stuck it in her mouth. I love it!
